Healthy Banana Oatmeal Raisin Cookies
Yields: 15 cookies
The familiar cozy spices and plump blueberries make these even more irresistible. They will keep for at least one week if stored in an airtight container in the fridge --if they last long!
1 cup (100g) instant oats (fermented if essential and measured like this)
3/4 cup (90g) whole wheat or gluten-free* flour (quantified like this)
1 1/2 teaspoon baking powder
1/4 tsp salt
2 tbsp (28g) unsalted butter or coconut oil, melted and cooled slightly
1/4 cup (63g) mashed banana
1 teaspoon vanilla extract
1/2 cup (120mL) pure maple syrup
In a medium bowlwhisk together the oats, flour, baking powder, cinnamon, and salt. Add the flour mixture, stirring only until incorporated.
